Toffee apple scones by @naturally.sar

Ingredients:

  • 1/2 cup plantmilk
  • 1/4 cup applesauce (unsweetened)
  • 1 apple
  • 1 1/2 tbsp maple syrup
  • splash of vanilla extract
  • 1 3/4 cup flour
  • 1/4 cup almond flour (or more plain flour)
  • 2 tsp baking powder
  • 1/4 tsp baking soda (natron)
  • 3 tbsp coconut sugar (for toffee flavour)
  • 1 tsp cinnamon
  • 1/2 tsp salt 
  • optional: 1 pinch of cardamom and nutmeg

First mix the milk and applesauce in a bowl and place in the freezer for 20 minutes. Meanwhile chop the apple finely and mix with maple syrup and vanilla in a small bowl. In a large bowl mix together the dry ingredients. After 20 minutes get the applesauce mix out of the freezer, stir to remove any frosty bites and add it to the dry ingredients along with the chopped-apple-mix. Mix until a bread-like dough forms. 

Place on a floured surface, kneed a little bit and then shape into a 1/2 inch thick circle and cut into triangles. I highly recommend sprinkling cinnamon sugar on top now. You can make your own with 1 tbsp of coconut sugar and 1 tsp of cinnamon. Place the scones on a baking tray and freeze for 15 minutes. Then bake them for 15-20 Minutes at 225°C until golden. Let the finished scones cool of a bit and enjoy! I like eating them slightly warm :)

Ginger shots without juicer

Ingredients:

  • 100 - 150g ginger
  • ~ 300g/4-5 small apples
  • 2 oranges
  • 1 lemon (at least the juice)
  • 750ml - 1l of water
  • optional: 1 tbs tumeric + some ground black pepper

Instructions:

Wash and core apples, peal oranges and squeeze or peal lemon. Put all ingredients in a blender and blend until everything is finely chopped. Pour through a nutmilk bag or fine sieve. Clean the nutmilk bag immeditaly after using, because the intense orange colour from the tumeric will stain it. The immunity shots will last for about 3-5 days in the fridge. If you are new to ginger shots start with 80g or 100g and work your way up over time.

 

Especially in this situation, during a world pandemic, it is important to strengthen your immune system. While disinfecting everything and social distancing our bodies are kept away from bacteria in general which causes our immune system to weaken. That means we have two important reasons to boost it as much as we can.



Smoothie-Bowl (cold)

Ingredients:

  • 1 (frozen) banana
  • Greens (fresh/frozen spinach, kale, celery, lettuce, chard)
  • ~ 150 gr (frozen) berries
  • 1 tsp superfoods (barleygrass, moringa, macca etc.)*
  • optional: 2 tbsp protein powder (i love vivolife)
  • Water or plantmilk to blend
  • Toppings (cacao nibs, nuts, nutbutters, seeds, coconut, protein bar etc.)

Instructions:

Blend all ingredients in a blender until desired consistency.

Top with your favorite Toppings; I like cocoa nibs, nuts, seeds, granola, shredded coconut, raw peanut/almond butter, puffed quinoa.
